The short version
Bindette collects no data. It never connects to the internet, so nothing you open can leave your device. There is no account, no tracking and no analytics.
Your audio stays on your device
Bindette reads the audio files and pictures you choose or drop, on your Mac, iPhone, iPad or Android device, and writes the audiobook only where you choose (on iPhone and iPad, in the app's own folder in the Files app until you share it). It never sends them anywhere.
A saved project keeps references to its audio files (bookmarks on Apple devices, file permissions on Android), so it can open them again. It never contains the audio itself.
The Mac app has no network permission at all. On iPhone and iPad, a book being made can keep running briefly in the background; that is work on your device, not a connection. The Android app has no internet permission either. While it makes a book it shows its progress in a notification, and it asks once whether it may show notifications; the book is made without them too.
