Where are temperatures and fan speeds?

Apps from the Mac App Store run in Apple's sandbox, which does not allow reading hardware sensors, so the App Store version of Statuette does not show them by itself. With the free Statuette Sensors helper installed and running, the Temperature and Fans cards and their menu bar items appear within a few seconds. Everything else works without it.

I installed the helper and still see nothing

Open Statuette Sensors once from your Applications folder. It has no window, so nothing visible happens, but it starts reading sensors in the background and adds itself to your login items. Statuette's Settings, under General, shows whether it is running.

Items disappeared from my menu bar

macOS hides menu bar items when there is not enough room, which happens on Macs with a notch when another app shows a long menu. Close some windows, or switch to one combined entry under Settings › Menu Bar › Layout. Check also that Statuette is allowed in System Settings › Menu Bar.

What do the temperature groups mean?

Apple does not document its sensor names, so Statuette labels only the ones that are well established: processor, graphics, memory, storage, battery, Wi-Fi, enclosure (how warm the case feels) and airflow (the air inside). Each group shows its hottest sensor, which is what throttling responds to. macOS has no single "system temperature".

Does it slow my Mac down?

No. Statuette samples once every two seconds by default and uses a fraction of one percent of one core. You can make it sample less often under Settings › General.
